- 1kg potatoes, such as rooster, peeled and cut into 3cm chunks
- 125ml skimmed milk
- 3tbsp low-fat spread
- 1tsp Dijon mustard
- Chopped fresh flatleaf parsley (optional)
- Put the potatoes in a large saucepan and just cover with water. Bring to the boil, then reduce the heat to medium and simmer for 15 min or until tender. Drain, then return the potatoes to the pan. Meanwhile, warm the milk in a saucepan over a low heat.
- Add the spread, mustard and warm milk to the potatoes, season with pepper and mash well. Sprinkle over the herbs, if using, and mash again briefly to combine, then serve.
