Here’s the first of the week’s recipes – you can repeat this week through the month, as you like.
Cut a wholemeal muffin in half and toast. Top one half with a poached egg and the other with 80g mushrooms, sautéed for 5 min in 1tsp olive oil
Skinny cappuccino and a peach
Chop 100g cooked chicken and toss in a bowl with mixed salad leaves and 1tbsp low-fat dressing. Serve with 200g boiled new potatoes, crushed and drizzled with balsamic vinegar. Have 80g diced mango topped with 50g 2% fat greek yogurt to follow
30g unsalted almonds
1 serving rigatoni with ratatouille. Plus 1 sliced orange
