Here’s the first of the week’s recipes – you can repeat this week through the month, as you like.
The night before, cover 50g dried fruit with 100ml boiling water and 2tbsp orange juice. Stir in the zest of a lemon and a pinch of cinnamon. Leave overnight to soak. In the morning, warm gently on the hob and serve with 150g 2% fat greek yogurt and 10g chopped nuts
25g dark chocolate
300ml pea and mint soup, with a slice of toasted sourdough bread. Follow with 1 banana and 80g grapes
1 serving vegetable gnocchi with mushroom and lentil ragoût
