If sweet pancakes are more your style, then check out these 4 quick and easy pancake topping ideas to take your stack to the next level. From a light fruity compote to banana with chocolate sauce, all of these fantastic topping ideas are easy to do. 

Just whip up a batch of your choice of pancakes (go for a classic crêpe or try this fluffy American-style recipe) before adorning with one of these sweet toppings.

Pear and apple pancakes

Serves: 4

Melt a little low-fat spread  in a large frying pan, then add 3 chopped apples and 3 chopped pears and cook for 5-6 minutes until soft and golden. Add 1tbsp honey, 1tsp vanilla extract and ½ tsp ground mixed spice and cook for a further 1 min. Spoon over your choice of pancakes.

Piña colada pancakes

Serves: 4

Peel and slice 1 medium pineapple into 8 rings. Heat a non-stick griddle pan, then add the pineapple in batches and cook for 1–2 min on each side until golden. Transfer to a large platter and drizzle with 2tbsp rum. Sprinkle over a pinch of allspice, zest of ½ lime and 2tbsp icing sugar. To serve, top pancakes with 2 pineapple rings and 2tbsp yogurt.

Berry-ripple pancakes

Cook: 5 min + cooling + chilling
Serves: 4

Before starting, thaw out a 320g frozen bag of mixed berries. Warm 75g reduced-sugar strawberry jam in a small saucepan. Add any juices from the thawed berries with the zest of ½ orange, then bubble for 1 min. Remove from the heat and stir in the berries to coat. Cool, then chill for 1 hour. Swirl 8tbsp fat-free Greek yoghurt into the chilled fruit, then spoon onto pancakes.

Choc-banana pancakes

Prep: 10min
Cook: 5 min
Serves: 4

Gently heat 100ml semi-skimmed milk with 1tsp vanilla extract in a small saucepan. Add 40g dark chocolate, then remove from the heat and stir until melted. To serve, spoon the chocolate sauce over pancakes, top with sliced banana rings and scatter over toasted hazelnuts.
