- 100g dried apricots, chopped
- 150ml orange juice
- ½tsp ground cinnamon
- 2 cardamom pods, bruised
- 1 quantity of quick porridge
- 2tbsp chopped unsalted pistachios
- Put the apricots, juice, cinnamon and cardamom in a saucepan and simmer over a medium-low heat for 5 min or until syrupy. Spoon the porridge into bowls, then top with the compote and pistachios.
