Avocado, smoked trout & baby spinach on toast

  • 2 slices wholegrain bread
  • ½ ripe avocado
  • 1tbsp snipped fresh chives
  • 2tsp lemon juice
  • Tabasco sauce, to taste
  • 50g smoked trout slices
  • 25g baby spinach


  1. Toast the bread. Meanwhile, mash the avocado with the chives, lemon juice and tabasco. Spread the mixture on to the toasts, then top with the trout and spinach leaves. Sprinkle with cracked black pepper to serve.
