- 200g plain flour
- ½tsp baking powder
- 85g rolled oats
- 125g caster sugar
- 1tsp ground mixed spice or nutmeg
- 150g low-fat spread
- 75g dried blueberries
- 50g pecans or walnuts, roughly chopped
- 1 egg, beaten
- Preheat the oven to 180°C/fan 160°C/gas 4. Line 2 large baking trays with baking paper.
- Mix all the ingredients together in a large bowl to form a soft dough. Spoon 1tbsp measures on to the prepared baking sheets, spacing them at least 4cm apart. Flatten slightly with oiled fingers, then bake for 15–18 min until lightly golden. Leave on the tray to harden, then cool completely on a wire rack.
