Cherry-ripe bliss balls

These fruit and nut-based sweet bites will help keep both your calorie count and sugar intake under control

  • 40g almonds
  • 100g desiccated coconut, plus 4tbsp extra
  • 2tbsp cocoa powder, sifted
  • 175g medjool dates
  • 30g dried cherries (not glacé)
  • 4–5 fresh or frozen cherries, pitted


    1. Put the almonds, coconut and cocoa powder in a food processor and whiz until finely chopped. Then, with the motor running, gradually add the dates and the dried cherries until everything is finely chopped and well combined. Add the fresh or frozen cherries, one at a time, pulsing until the mixture comes together in a ball.
    2. Roll the mixture into 20 balls (about 1tbsp mixture per ball). Put the extra coconut on a large plate and roll each ball in the coconut to lightly coat. Transfer to an airtight container and chill in the fridge until firm.

HOW TO STORE Keep in an airtight container in the fridge for up to a week, or transfer the balls to a freezerproof container and freeze for up to 2 months. You don’t even need to thaw before eating – they make a delicious frozen treat, too.
