Chicken, squash & rocket pizza

Ingredients

  • Cooking oil spray
  • 2 large khobez wraps (widely available)
  • 100g caramelised onion relish
  • 150g cooked skinless chicken breast, diced
  • 150g mushrooms, sliced
  • 175g cooked butternut squash, diced
  • 100g ricotta
  • 75g reduced-fat mature cheese, grated
  • 25g rocket, to serve

Method

  1. Heat the oven to 200°C/fan 180ºC/gas 6 and lightly spray 2 large baking sheets with oil. Put the wraps on the baking sheets, then spread over the onion relish. Arrange the chicken, mushrooms and squash on top of each, then spoon over the ricotta and sprinkle with the grated cheese.
  2. Cook in the oven for 10–12 min until the bases are crisp and the cheese melted. Top with the rocket, season with ground black pepper, then cut the pizzas in half and serve.
