- ½ medium avocado
- 1tbsp lemon juice
- Tabasco, to taste
- 2 slices low-calorie wholemeal bread (we used Hovis Nimble)
- 1 large tomato, sliced
- Handful rocket leaves
- 25g reduced-fat feta, crumbled
- 1tbsp toasted seeds
- Pinch chilli flakes, to taste
- Mash the avocado with the lemon juice and tabasco.
- Toast the bread, then top with the avocado mixture, tomato slices, rocket and feta. Sprinkle with the seeds and chilli flakes.
- Serve on a split gluten-free crusty roll or bread instead.
