- 1.8kg maris piper potatoes, peeled and cut into 4cm chunks
- 4 bay leaves
- 3tbsp olive oil
- Preheat the oven to 190°C/fan 170°C/gas 5. Put the potatoes into a large pan of cold water with the bay leaves and bring to the boil. Reduce the heat and simmer for 8 min. Drain well, then return to the pan and add the oil. Shake the pan to roughen up the edges, then season with black pepper.
- Transfer to a very large baking sheet and roast for 1 hr or until crisp and golden. Discard the bay leaves to serve.
