- 300g blanched almonds
- Pinch sea salt
- Heat the oven to 200°C/fan 180°C /gas 6.
- Put the almonds on a baking tray and cook in the oven for 10 min until golden. Remove and leave to cool to room temperature.
- Once the almonds have cooled, put them in a food processor and blend for around 15 min until a smooth mixture forms, adding in the salt in the last few minutes. You really do need a food processor to make this – I don’t recommend using a blender as it could break.
TIP: It always takes longer than you think to reach that smooth texture, so be patient with it! Once ready, store in an airtight container in the fridge for 1-2 weeks.
