Edamame and mint dip

This quick edamame and mint dip recipe makes a great low calorie snack with some crunchy crudités.

Ingredients

  • 150g shelled soya beans, thawed if frozen
  • 1tbsp white miso paste
  • 1tbsp extra-virgin olive oil
  • Juice ½ lemon, plus extra
  • 2tbsp chopped fresh mint
  • Dash tabasco sauce

Method

  1. Blend all the ingredients in a food processor with 2tbsp water until combined. Add extra lemon juice or water to thin, if necessary. Cover the dip and chill until ready to serve.
