- 1 portion leftover potato, courgette and herb frittata
- 1 vacuum-packed beetroot, chopped
- 30g mixed salad leaves
- 6 cherry tomatoes, halved
- 1 tbsp balsamic vinegar, to serve
- Cut the portion of frittata into chunks, add the salad, tomatoes and beetroot. Drizzle with the balsamic vinegar. It’s as easy as that!
