Frozen eton mess

  • 250g lemon sorbet
  • 200g frozen summer berries
  • 40g meringue nests, roughly crushed


  1. Put the sorbet in a large bowl and beat with a wooden spoon to soften slightly. Add the berries and mash until broken up, then stir through the meringue pieces.
  2. Scoop the mixture into 6 serving glasses or bowls, then freeze for at least 10 min to firm up or until ready to serve.
