- 2 slices wholegrain bread
- 4tbsp reduced-fat hummus
- 1 large vine-ripened tomato, sliced
- 25g reduced-fat feta, crumbled
- 3tbsp chopped fresh flatleaf parsley
- Toast the bread, then spread with the hummus. Top with the tomato slices, feta and parsley, then sprinkle with black pepper and serve.
