Hummus, tomato, feta and parsley toast

Whatever the clock says, this toast topper will hit the spot. Choose one for a hearty breakfast – or help yourself to two rounds for lunch.

  • 2 slices wholegrain bread
  • 4tbsp reduced-fat hummus
  • 1 large vine-ripened tomato, sliced
  • 25g reduced-fat feta, crumbled
  • 3tbsp chopped fresh flatleaf parsley


  1. Toast the bread, then spread with the hummus. Top with the tomato slices, feta and parsley, then sprinkle with black pepper and serve.
