Kiwi meringue pots

Ingredients

  • 500g tub 2% fat Greek yogurt
  • 2tsp icing sugar, sifted
  • 50g ready-made mini meringues, crumbled
  • 6–8 kiwi fruits (about 500g), peeled and chopped

Method

  1. Put the Greek yogurt and icing sugar into a mixing bowl, then stir to combine. Add the diced kiwi and crumbled meringues, then gently fold together.
  2. Spoon the mixture into short glasses and serve.
