- 4 eggs
- 100ml reduced-fat crème fraîche
- 100g reduced-fat strong cheddar, grated
- 2 spring onions, diced
- 5 balls of frozen spinach, defrosted and drained
- ½tsp ground nutmeg
- Heat the oven to 180°C/fan 160°C/gas 4 and lightly grease an ovenproof dish or 4 ramekins. With a fork, whisk together the eggs and crème fraîche in a medium bowl, then stir in the rest of the ingredients with some freshly ground black pepper. Pour the mixture into the dish or ramekins and bake in the oven for about 15 min for the ramekins, 25 min for one dish until cooked.
