- 175g self-raising flour
- 175g skimmed milk
- 1 egg
- 1tsp vanilla extract
- 1tbsp runny honey
- 125g blueberries, fresh or frozen
- Spray olive oil
- Sift the flour into a large bowl. Whisk together the milk, egg, vanilla and honey in a jug. Slowly wisk the egg mixutre into the flour until combined and smooth, then tire through the blueberries.
- Spray a large non-stick frying pan with olive oil and set over a medium heat. Put heaped tablespoons of the mixture into the pan, spacing them well apart. Cook for 1-2 min until bubbles appear on the surface, then turn and cook for a further 1 min or until golden. Repeat to make 16 pikelets.
- Cool and serve, or store in an airtight container.
