Low fat blueberry pancakes

These healthy blueberry pancakes are the perfect snack for lunchboxes, picnics and long journeys with the family. A delicious low calorie treat.

Ingredients

  • 175g self-raising flour
  • 175g skimmed milk
  • 1 egg
  • 1tsp vanilla extract
  • 1tbsp runny honey
  • 125g blueberries, fresh or frozen
  • Spray olive oil

Method

  1. Sift the flour into a large bowl. Whisk together the milk, egg, vanilla and honey in a jug. Slowly wisk the egg mixutre into the flour until combined and smooth, then tire through the blueberries.
  2. Spray a large non-stick frying pan with olive oil and set over a medium heat. Put heaped tablespoons of the mixture into the pan, spacing them well apart. Cook for 1-2 min until bubbles appear on the surface, then turn and cook for a further 1 min or until golden. Repeat to make 16 pikelets.
  3. Cool and serve, or store in an airtight container.
