- 325g mangetout
- 100g bag mixed salad leaves
- 1 cucumber, peeled into ribbons
- 2tbsp snipped fresh chives
- 2tbsp balsamic vinegar
- Blanch the mangetout in a pan of boiling water for 1 min or until bright green and tender-crisp. Drain in a colander, then refresh under cold running water.
- Put the mangetout in a bowl with the remaining ingredients and toss to combine, then serve.
