Mangetout salad

A simple mangetout salad made with salad leaves, cucumber, fresh chives and balsamic vinegar. It's great served with grilled chicken or fish.

Ingredients

  • 325g mangetout
  • 100g bag mixed salad leaves
  • 1 cucumber, peeled into ribbons
  • 2tbsp snipped fresh chives
  • 2tbsp balsamic vinegar

Method

  1. Blanch the mangetout in a pan of boiling water for 1 min or until bright green and tender-crisp. Drain in a colander, then refresh under cold running water.
  2. Put the mangetout in a bowl with the remaining ingredients and toss to combine, then serve.
