Pea and avocado guacamole

Leave the high-fat snacks on the shelf and get behind this pea and avocado guacamole. Perfect for shared dinner party nibbles and ready in 15 minutes.

  • 250g frozen peas, thawed
  • 2 spring onions, sliced
  • 1–2tbsp sliced pickled jalapeños, to taste
  • 3tbsp fresh coriander leaves
  • 3tbsp fresh mint leaves
  • 2 large ripe avocados
  • Juice 1 lime
  • 1tbsp toasted pine nuts


  1. Put the peas, spring onions, jalapeños, coriander and mint in a food processor. Whiz for 30 sec or until combined but still chunky.
  2. Add the avocado flesh to the food processor and whiz again until the texture is to your liking.
  3. Transfer the guacamole to a bowl, stir in the lime juice, season with black pepper and sprinkle over the toasted pine nuts. Serve with your favourite crudités or crackers.
