Poached cinnamon pears

  • 75g caster sugar
  • 2 x 10cm cinnamon sticks
  • Zest of ½ lemon, pared into long strips with a vegetable peeler
  • 6 firm but ripe pears, peeled, quartered and cored
  • 4 small scoops low-fat vanilla ice cream, to serve

  1. Put the sugar, cinnamon sticks, lemon zest and 450ml cold water in a large pan. Stir over a medium heat until the sugar dissolves. Turn up the heat and bring the mixture to the boil, then reduce the heat to low and simmer gently for 5 min.
  2. Add the pears to the pan and poach for 15 min or until tender.
  3. Divide the pears among 4 serving bowls, drizzle over a little cinnamon syrup, then serve with the ice cream.
