Popcorn and nut trail mix

Add extra flavour and texture to trail mix, by baking in the oven with a mix of popcorn and spices. Tub it up to enjoy when afternoon cravings hit.

Ingredients

  • 100g plain popped popcorn
  • 150g mixed unsalted nuts
  • 2tsp smoked paprika
  • ½tsp chilli powder

Method

  1. Heat the oven to 190ºC/fan 170°C/gas 5 and line two baking trays with baking paper.
  2. Toss the popped popcorn with the mixed unsalted nuts, 2tsp smoked paprika and ½tsp chilli powder. Put on trays, spritz with spray olive oil and bake for 10 min or until golden.
  3. Let the trays cool, then store the mix in an airtight container for up to a week.
