Five-minute roast lamb salad

This quick lamb salad is a great way to make roast meat leftovers go further. Simply add some extra veg and spices and you've got a healthy lunchbox!

  1. Put the leftover lamb, couscous and roasted veg in a bowl with the rocket and toss to combine. Drizzle with the remaining tahini yogurt and the dukkah and serve with the lemon wedges.
