- 500g raw peanuts
- ½tsp salt
- Heat the oven to 180°C/fan 160°C/gas 4. Spread the peanuts on a baking dish and roast for 5–8 min until golden. Keep an eye on them, as nuts burn quickly! Remove from the oven and allow to cool.
- Put the cooled nuts in a blender or food processor with the salt (this is needed to stop the butter going rancid too quickly). Blitz until the nut butter has reached your desired texture, tamping the mixture down if necessary.
- Transfer to a sterilised jar, seal with the lid and keep in the fridge for up to 1 month.
WE LOVE IT… on grainy toast. Top with a sliced banana and a small drizzle of honey, if you like.
