Ruby pears

  • 750ml red grape juice
  • 1tsp vanilla bean paste
  • ¼tsp ground mixed spice
  • Zest of ½ orange (optional)
  • 60g caster sugar
  • 4 firm pears, peeled

  1. Put the grape juice in a small deep pan with the vanilla, mixed spice, orange zest, if using, and sugar. Heat gently until the sugar dissolves.
  2. Add the pears to the pan, making sure they are covered with liquid. Bring to the boil, then cover with a lid and simmer for 25 min or until tender.
  3. Lift the pears into a warm dish. Boil the juice rapidly for 20 min or until the syrup is reduced by half. Serve the pears hot or cold with the syrup poured over.
