Spiced baked eggs

  • 4 servings of tomato and bean chilli 
  • 4 eggs
  • 75g half-fat mature cheese, grated
  • 8 sourdough slices
  • Fresh coriander or flatleaf parsley, chopped, to garnish

  1. Heat the oven to 200°C/fan 180ºC/gas 6. Divide the chilli among 4 heatproof dishes, then use a spoon to create a well in the centre of each. Warm the chilli in the oven for 10 min.
  2. Remove the dishes from the oven and crack an egg into each well. Sprinkle over the grated cheese and season with ground black pepper, then return to the oven for a further 12–15 min until the eggs are just set.
  3. Meanwhile, toast the bread and divide among 4 serving plates. Remove the baked eggs from the oven. Garnish with coriander or parsley and serve with the toast.
