- Cooking oil spray
- 350g small strawberries, hulled
- 3 eggs
- 50g caster sugar
- 115g plain flour
- 200ml skimmed milk
- 2tsp vanilla extract
- Preheat the oven to 190°C/fan 170°C/gas 5. Lightly oil a 20cm round baking dish or ovenproof frying pan. Scatter the strawberries over the base of the dish.
- Whisk the eggs, sugar, flour, milk and vanilla extract to make a smooth batter. Pour the mixture over the strawberries.
- Bake for 25–30 min until the batter is golden around the edges, but still has a little wobble in the middle. Leave for 10 min, then slice and serve.
