Healthy strawberry clafoutis

Quick, simple and extremely satisfying, this healthy strawberry clafoutis is the perfect dessert to serve at your next summer party

Serves 4

Cooking Time 30 min + cooling

Ingredients

  • Cooking oil spray
  • 350g small strawberries, hulled
  • 3 eggs
  • 50g caster sugar
  • 115g plain flour
  • 200ml skimmed milk
  • 2tsp vanilla extract

Method

  1. Preheat the oven to 190°C/fan 170°C/gas 5. Lightly oil a 20cm round baking dish or ovenproof frying pan. Scatter the strawberries over the base of the dish.
  2. Whisk the eggs, sugar, flour, milk and vanilla extract to make  a smooth batter. Pour the mixture over the strawberries.
  3. Bake for 25–30 min until the batter is golden around the edges, but still has a little wobble in the middle. Leave for 10 min, then slice and serve.
