Smoky sweet potato, peanut butter and quinoa burgers

These satay-style peanut butter veggie burgers taste rich and creamy, have a subtle smoky flavour from the chipotle paste and are less than 450 calories per serving.

  • 1 small sweet potato, peeled and chopped
  • 400g can cannellini beans, drained and lightly
    pressed dry
  • 2tsp chipotle paste
  • 2tbsp no added sugar or salt peanut butter
  • 2tsp reduced-salt soy sauce
  • ½ x 250g pack ready to heat quinoa
  • 1 shallot, finely diced
  • Spray olive oil
  • 4 grainy rolls, halved
  • 100g ricotta
  • 50g baby spinach
  • 1 small beetroot, peeled and grated
  • 2 tomatoes, sliced


    1. Steam or microwave the sweet potato for 4–5 min until tender, then put it in a large bowl with the beans, chipotle paste, peanut butter and soy sauce. Mash until almost smooth. Stir through the quinoa and shallot.
    2. Shape the mixture into 4 large burgers. Put a large non-stick frying pan over a medium heat and spray with olive oil. Add the burgers and cook, turning once, for 10 min or until golden brown.
    3. Spread the base of each roll with ricotta. Top with the spinach, grated beetroot, a sweet potato burger and tomato slices. Add the roll lids and serve.

FREEZE the burgers uncooked and defrost fully before completing the recipe.
