- 400g tin mixed beans in water, drained
- 200g tin tuna in spring water, drained and flaked
- 50g slow-roasted tomatoes, chopped
- 4 celery sticks, diced
- ¼ cucumber, diced
- 50g rocket
- 1tbsp balsamic vinegar
- Put the beans, tuna, tomatoes, celery, cucumber and rocket in a mixing bowl. Season with ground black pepper and drizzle with the vinegar, then toss together. Serve on a platter or divide among 2 plates.
