Tuna & bean salad

  • 400g tin mixed beans in water, drained
  • 200g tin tuna in spring water, drained and flaked
  • 50g slow-roasted tomatoes, chopped
  • 4 celery sticks, diced
  • ¼ cucumber, diced
  • 50g rocket
  • 1tbsp balsamic vinegar


  1. Put the beans, tuna, tomatoes, celery, cucumber and rocket in a mixing bowl. Season with ground black pepper and drizzle with the vinegar, then toss together. Serve on a platter or divide among 2 plates.
