- 2 slices wholegrain bread
- 2tbsp low-fat cottage cheese
- ½tsp vanilla extract
- 2 small bananas, sliced
- 1tbsp coconut flakes, lightly toasted, or 1½tsp dessicated coconut
- Toast the bread. Mash the cottage cheese with the vanilla extract, then spread on to the toast slices. Top with the banana and sprinkle over the coconut to serve.
