Vanilla custard

Serves 4 Prep 5 min Cook 5 min


  • 300ml skimmed milk
  • 1tsp vanilla paste or 1 vanilla pod, seeds removed and pod cut into pieces, to decorate
  • 2 egg yolks
  • 2tbsp caster sugar
  • 1tbsp cornflour


  1. Heat the milk in a medium pan with the vanilla paste or seeds – allow it to just come to the boil. Meanwhile, in a large bowl, beat the egg yolks with the sugar. In a small bowl, mix the cornflour with 2tbsp water to make a paste.
  2. Pour the hot milk over the egg mixture, whisking to combine. Pour the mixture back into the pan, then stir in the cornflour paste.
  3. Cook, stirring, over a low heat for 3–4 min until thick enough to coat the back of a wooden spoon. Serve warm, decorated with the vanilla pod, if using, or leave to cool, then cover and chill.
