- 1 Ryvita crispbread
- 2tbsp reduced-fat hummus
- 40g roasted red peppers in brine from a jar, drained and sliced
- A few rocket leaves
- ½tsp balsamic vinegar
- Spread the crispbread with the hummus and top with the red pepper slices. Add the rocket and drizzle with the vinegar.
